Vegan Puerto Rican Pasteles in Under An Hour (Tamales)
Annatto oil:
1 Cup oil
2 Tbs Annatto seeds
Filling for 1 dozen:
2 Cups of TVP (Textured Vegetable Protein) or beans, quinoa, tofu, mock meat
5 Tbsp sofrito
8 Ounces tomato sauce
Splash of water
Adobo to taste
Sazon to taste
2 Tbsp annatto oil
Dough (Masa) (12 Pasteles):
6 Green bananas
1 large plantain
1 lb calabaza (pumpkin)
1 lb yautia
1 med. potato
5 Tbs annatto oil
Adobo to taste
Salt to taste
Pastel Paper, String, Banana Leaves
Optional filling additions: Garbanzo Beans, Red pepper, Olives, Raisins
Cooking Instructions:
If it’s thawed boil in salted water for 45 minutes
If it’s frozen boil in salted water for 80-90 minutes
